PREHEAT OVEN at 375F Degrees (on Roast setting).
1) Slice Broccoli head in half. Then, slice broccoli in the same manner as you would if slicing
a loaf of bread, so that each floret has a flat edge. Cut florets from stalk and discard stalk pieces.
2) Melt 2 Tablespoons Coconut Oil in a ramekin placed in the microwave.
3) Squeeze 1/2 of an orange (or 1/2 lemon) into the melted coconut oil. Use a zester and zest
some of the orange peel from the unused half of the orange. Add to coconut oil mixture.
4) In a small bowl, thoroughly mix the coconut oil mixture with the broccoli florets using your hands to massage
the oil on the florets. Add 2 cloves minced garlic and salt. Set aside for 10+ minutes.*
5) Spread florets evenly onto a parchment-lined baking sheet (making sure not to pile any florets
on top of each other).
6) Roast for 10-12 minutes (until lightly browned).
7) Add freshly grated parmesan cheese and roast for only 1 minute more.
8) Remove from oven and sprinkly with 1/2 lemon and freshly grated pepper.
9) Serve in individual small dishes or ramekins.
