DIRECTORS

Claudine Lovitt
Executive Director

Claudine Lovitt is an attorney who is admitted to practice law in the states of New York, Connecticut, and Ohio.  She was graduated from Colgate University with a B.A. in Philosophy and German.  She has also studied extensively abroad, including at Oxford University, Universität Wien (Vienna, Austria), and Universtität Freiburg (Germany).   Claudine last practiced corporate and securities law with Baker Hostetler, a multi-practice top tier law firm headquartered in Cleveland, Ohio, where she specialized in advising clients on federal and state securities law regulations and transactions involving Fortune 500 companies, as well as medium-sized and small businesses.  She also has extensive experience counseling small and medium-sized businesses, reviewing complex state and federal regulations, and drafting and negotiating contracts.  In particular, Ms. Lovitt utilized her securities and corporate law expertise extensively during the “internet boom” of the 90s which was a period of unprecedented accelerated growth in the private and public securities offering markets.   After moving to Charlotte, North Carolina, Claudine suspended her practice of law in order to devote all of her time to raising her three children.

Ms. Lovitt founded Kids Heart Felt Health with the intention of sharing what she has learned as the mother of a Type 1 diabetic child.  Through daily management of her child's Type 1 diabetes, Claudine has learned first-hand how food and physical fitness directly impact a child's health and school performance.  Claudine has also realized that there is a great need to continue to raise awareness and empathy for individuals who suffer from medical conditions and standard of living situations that are out of their control.

Claudine is also the founder of Charlotte Junior Tennis Inc., which has been running innovative junior tennis programs, including community outreach tennis camps and clinics, since 2008.   It was through running Charlotte Junior Tennis that Claudine learned how to create and implement programs dedicated to instilling healthy living habits and core character values in children.

CHEFS

Kids Heart Felt Health is fortunate to have some superior chefs who have contributed their talents to our program.

 Eileen H. DelPiano
Executive Chef, Kids Heart Felt Health

Eileen is a culinary instructor at the Culinary Institute of Virginia.  Previously, she was a Senior Sous Chef for Levy Restaurants at Charlotte Motor Speedway where she worked for ten years.  Eileen was professionally trained at culinary school in Charlotte, where she was a “top” student, maintaining a 4.0 GPA.  While attending culinary school, Eileen was promoted to Sous Chef at a local country club, where she prepared high quality food and organized numerous exclusive catered events.
After 6 years as Sous Chef, Eileen joined Levy Restaurants.  In this role, Eileen has organized numerous catered NASCAR events held in Charlotte, Bristol, TN, Sonoma, CA and Chicago.  She has also traveled to other locations to run specific segments for these NSACAR events.

In 2009, Eileen led a group of chefs at a Super Bowl XLIII event in Tampa, FL.  This was an exciting, fast paced event to deliver high quality food that received positive feedback for Charlotte.  In addition, Eileen has also had experience coordinating and catering many local specialized events, including The Cirque de Sole, the Wachovia Golf Tournament (now Quail Hollow Tournament), and Charlotte Bobcats events at Time Warner Cable Arena.  The small specialty catering required at these events, the unique food, and “upscale” presentation was an exciting addition to her experience catering large-scale events.

This past summer, Eileen was able to showcase her talent and passion for healthy cooking when she was asked to join a “Race Across America” bicycle team as their exclusive chef.  As part of the “team”, Eileen prepared all of cyclists meals during the 14 day tour across America.
Eileen is certified in SERVSAFE (food handling and preparation).  While with Levy Restaurants, she was also the Loss Prevention Coordinator and attended Management Academy and media training.  This gave Eileen the opportunity to appear in many local radio and television spots promoting specialty foods showcased at major events.

During retirement Eileen has turned her focus toward her passion for healthy cooking and teaching our youth the need for healthy options.  She is instrumental in writing many healthy recipes for Kids Heart Felt Health.
